We slow-cooked yellow onions for nearly an hour until they turned deep golden and jammy, then folded them into our goat milk sourdough with cubes of sharp cheddar. The cheese melts into pockets throughout the crumb and caramelizes against the crust during baking — you’ll smell it before you see it.
The base is the same goat milk boule we’ve been perfecting at The Hudstead — raw milk from our own Nigerian Dwarf herd, cold-proofed overnight, baked in a cast iron Dutch oven. The cheddar and onion turn it into something else entirely.
Rich, savory, and a little sweet from the onions. Slice it thick and eat it warm with butter, or use it for the best grilled cheese you’ve ever made.
